Vinification of Bolgheri Rosso Doc by Colle Massari
The foundation of the powerful Bolgheri Rosso Doc from Tuscany is made from grapes of the Cabernet Franc, Cabernet Sauvignon, and Merlot varieties. After hand harvesting, the grapes are quickly transferred to the winery, where they are carefully selected and gently crushed. The fermentation then takes place in small wooden tanks at controlled temperatures. Following vinification, the wine undergoes several months of maturation in oak barriques. After the wine is finished, the Bolgheri Rosso Doc is carefully harmonized.
