Vinification of the Braide Alte Bianco Delle Venezie IGT from Livon
This award-winning white wine is produced as Gran Cru. The grapes for this cuvée grow in the Braide vineyard near Ruttars in the municipality of Dolegna del Collio in eastern Friuli, on loamy marl soils of oceanic origin. Chardonnay, Sauvignon Blanc, Picolit and Moscato Giallo are vinified for this Gran Cru. The grapes are harvested exclusively manually, the grapes are placed in small boxes in the wine cellar and cold-macerated in the horizontal press for a period of eight hours, the must is then clarified by natural decantation. The subsequent fermentation takes place entirely in the French barriques from Allier at a controlled temperature of 14° - 16°C, after which the wine is aged in the same barrels for eight months at a constant temperature. After the formation of the cuvée from the various wines, it is bottled and matures and harmonizes for a long time in the bottle store before it is put on sale.
The old Gran Cru Braide can be stored for 10 to 15 years.

This complex and elegant Gran Cru white wine from the Livon winery in Friuli is an ideal accompaniment when served at 12° to 13° C, with pasta and rice with fish, with main courses with flavour-intensive and full-bodied fish such as swordfish, polefish with tomato sauce, poultry and soft, unripened cheeses. Feel free to try the Braide Alte also at 16° to 17° C as an excellent pairing with lamb, goat roast and grilled flesh.
