The grapes for this wine come from the cool sites of the Tenuta Castello della Sala in Umbria. The soils there consist of limestone, clay and fossil deposits. This provides good drainage, slow ripening and fine mineral tension in the wine. The vines stand in well-tended parcels with reduced yields. This concentrates the aroma in the grapes. The harvest is selective and usually takes place in the early morning hours. This keeps the grapes cool, fresh and aromatic. Only ripe berries reach the winery, where they are gently pressed. The must is clarified before fermentation starts. Part of the cuvée ferments in small oak barrels, another part in stainless steel tanks. This combination ensures a balance of fruit, freshness and structure. Fermentation in wood gives the wine its fine vanilla note and creamy texture. Regular stirring of the lees, the so-called bâtonnage, brings additional melt and depth. Fermentation in steel, on the other hand, preserves the clear fruit and the lively, firm acidity. The result is a harmonious style that elegantly unites wood, fruit and minerality. After fermentation, the wine continues to mature on the lees. This elevage refines the aromatics and provides a complex mouthfeel. The nutty almond notes and fine brioche aromas also develop during this phase.
