When perfectly ripe, the grapes for Cotis Primitivo di Manduria are harvested exclusively by hand without the use of coarse and not very selective machines. After harvesting, the grapes are quickly brought to the winery. Here they are selected and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. After fermentation has ended, Cotis Primitivo di Manduria is aged for another 12 months in oak barriques.
