The Dr. Philosophy Cabernet Sauvignon from Emil Bauer in the Palatinate presents a bright, purple color in the wine glass. In the glass, this red wine from Emil Bauer offers aromas of blueberries, blackberries, black currants and mulberries, complemented by gingerbread spice, vanilla and green peppers. The Emil Bauer Dr. Philosophy Cabernet Sauvignon presents itself to the connoisseur wonderfully dry. This red wine never appears coarse or meager, as one might expect from a wine in the high quality wine range. On the palate, the texture of this balanced red wine is wonderfully dense. In the finish, this good storable red wine from the wine-growing region of Palatinate finally inspires with considerable length. There are again hints of black currant and blueberry. In the aftertaste, mineral notes of the limestone and clay dominated soils are added.

Vinification of the Dr. Philosophy Cabernet Sauvignon by Emil Bauer

The basis for the balanced Dr. Philosophy Cabernet Sauvignon from the Palatinate is grapes from the Cabernet Sauvignon grape variety. In the Palatinate, the vines that produce the grapes for this wine grow on soils of clay, limestone and loess. The grapes for this red wine from Germany, after ensuring optimal ripeness, are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully crushed. Then fermentation takes place in large wood at controlled temperatures. After the end of fermentation, the Dr. Philosophy Cabernet Sauvignon is aged for another 15 months in French oak barriques and double barrels.
