The balanced Grecanico Bio from Italy is a single-varietal wine, organically vinified from the Grecanico grape variety. In Sicily, the vines producing the grapes for this wine grow on limestone soils. The grapes for this Italian white wine are harvested exclusively by hand when perfectly ripe. After harvest, the grapes are quickly taken to the winery. Here, they undergo sorting and gentle crushing. The fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the Grecanico Bio can further harmonize on the fine lees for 6 months.
