Vinification of Cantine Settesoli Grillo Sicilia

This white wine clearly focuses on a single grape variety, namely Grillo. Only the best grapes were used for this wonderfully elegant varietal wine from Cantine Settesoli. When they are perfectly ripe, the grapes for Grillo Sicilia are harvested exclusively by hand, without the use of coarse and less selective mechanical harvesters. After harvesting, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is matured for several months on the fine lees before it is finally drawn off.

This Italian is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to fruity endive salad, pasta with fried sausage dumplings or stuffed cabbage rolls.
