More information about Isaras Brut - Kellerei Eisacktal
In the glass, Isaras Brut - Kellerei Eisacktal presents a light straw yellow with silvery reflexes and a fine, persistent perlage. The chain of bubbles rises densely and in a straight line, immediately whetting the appetite for the first sip. The first impression on the nose is clear, cool and precise. Lime and juicy lemon meet green and ripe apple, accompanied by white blossoms and a hint of fresh herbs.
With a little air, notes of Williams pear, damp stone and subtle brioche nuances emerge. The minerality is reminiscent of wet slate slabs after summer rain. A delicate hint of almond peel and lemon zest rounds off the aromatic profile. The cuvée of Müller-Thurgau and Silvaner elegantly brings the typical alpine freshness of South Tyrol into the glass.
On the palate, Isaras Brut - Kellerei Eisacktal shows a dry, crisp style with taut acidity and a light to medium body. The perlage is lively and fine, carrying the citrus fruit like a burst of freshness across the tongue. Lime, Granny Smith apple and a hint of grapefruit peel provide clear contours. A delicate impression of herbal spice and nutty yeast adds further tension.
The minerality of the weathered soils from the Eisack Valley shapes the mid-palate with salty and stony nuances. The finish is long for this style, with notes of lime peel, green pear and a hint of toast. Despite the firm acidity, the sparkling wine always appears balanced, with the finesse of the mousseux skilfully softening the freshness.
The style of Isaras Brut - Kellerei Eisacktal is clear, straightforward and elegant. It shows freshness and lightness, while at the same time depth through the fine yeast note and pronounced minerality. Müller-Thurgau contributes aromatic fruit reminiscent of citrus and apple, while Silvaner provides structure, salty accents and a cool, alpine profile.
The origin in northern Alto Adige with its mountain climate plays a central role. Warm days and cool nights promote slow ripening and stable acidity. The vines are rooted in barren, weathered soils rich in stone and minerals, which explains the clear, stony note in the wine. The high-altitude sites in the Eisack Valley thus provide grapes with intense aromatics and crystal-clear freshness.
For the sensory journey with this sparkling wine, these facets in particular are in focus:
- Citrus fruit with lime, lemon and delicate grapefruit peel
- Apple aromas from Granny Smith through to ripe yellow apple
- Fine yeast notes with brioche, toast and hints of almond
- Striking minerality with hints of wet stone and chalk
- Crisp, firm acidity and lively, fine perlage
In everyday life and on special occasions, the sparkling wine unfolds its best effect, especially in these situations:
- As a refreshing aperitif before a menu or at receptions
- With light starters featuring fish, vegetables or mild cheese
- As a companion for elegant celebrations and festive toasts
- For relaxed evenings on the terrace with fine snacks
- As a tasteful gift for lovers of alpine sparkling wines
Production of Isaras Brut from Kellerei Eisacktal
The grapes for Isaras Brut come from selected sites in the Eisack Valley in Trentino–South Tyrol. Steep slopes, cool altitude and plenty of sunshine shape the terroir around Chiusa (Klausen). The vines grow on barren, weathered soils with a high proportion of rock. These soils store warmth during the day, release it at night and thus ensure even ripening.
The grape varieties Müller-Thurgau and Silvaner complement each other ideally. Müller-Thurgau contributes intense aromatics with notes of citrus and blossoms. It provides freshness and charming fruit. Silvaner delivers structure, salty minerality and tension on the palate. Together they create a cuvée that shows alpine clarity and delicacy.
The harvest is selective, parcel by parcel. The winery picks in the early morning hours, when the grapes are still cool. This preserves aromas and acidity. In the cellar, the berries remain on the skins only briefly so that the must stays clean and clear. A gentle pressing process prevents bitter substances from skins and seeds.
The first fermentation takes place in temperature-controlled stainless steel tanks. Cool temperatures preserve the delicate fruit aromas of lime and apple. After fermentation, the base wine rests on the lees. This fine lees ageing brings subtle brioche and nut notes without masking the fresh character.
For the second fermentation in the bottle, the wine receives the classic dosage of yeast and sugar. The fine, persistent perlage develops in the bottle. The wine then matures on the lees for an extended period. In this way, Isaras Brut gains complexity, creamy nuances and texture. At the same time, the acidity remains firm and the style clearly dry.
Before final preparation, disgorgement takes place. In this process, the team at the winery removes the settled yeast from the neck of the bottle. A finely tuned shipping dosage defines the dry style with about six grams of residual sugar. The goal of Kellerei Eisacktal is clear fidelity to origin. The sparkling wine shows the alpine profile of the region with plenty of freshness, minerality and elegant fruit.
Serving recommendations for Isaras Brut from Kellerei Eisacktal
As an aperitif, Isaras Brut reveals its full appeal. The crisp structure and finely sparkling freshness stimulate the palate and prepare for a meal. With light starters such as cured char, marinated scallops or delicately smoked trout fillet, a fine interplay develops.
The sparkling wine harmonises very well with fresh salads, for example with goat’s cheese, apple slices and walnuts. Asparagus dishes with melted butter or a fine vinaigrette also make a harmonious match. The lime note of the wine picks up on the citrus element in the dressing and balances fat and seasoning.
Fish dishes from the oven or from the pan find a lively partner in Isaras Brut. Steamed cod with herbs, grilled sea bream with lemon or prawns with garlic and parsley benefit from the clear acidity and mineral character. The perlage lightens any sauce with elegance.
The sparkling wine is also very suitable for vegetarian cuisine. Vegetable quiches, risotto with green asparagus or pasta with lemon and herbs become light, stylish dishes with this wine. Mild, not overly mature cheeses such as young mountain cheese, Robiola or creamy fresh cheese are also a good match.
At festive occasions such as weddings, birthdays or receptions, Isaras Brut provides an elegant start. Its alpine freshness and DOC origin make it a valuable gift for lovers of Italian sparkling wines with character. The optimal serving temperature is between eleven and thirteen degrees. This allows the wine to show its full freshness without losing expression.
A short time in a decanter before serving brings out even more aromatic pleasure, especially for larger bottles. For enjoyment, a tall, slender sparkling wine glass is recommended, as it focuses the perlage and guides the aromas. With proper storage in a cool, dark place, Isaras Brut shows fresh, stimulating development for about five years from the vintage and remains a stylish companion for many occasions.
