The grapes for this wine come from the high, steep vineyards around Brixen in the heart of South Tyrol. Here, at up to 900 meters above sea level, the vines benefit from warm days and cool nights – ideal conditions for slow, even ripening. The soil consists mainly of slate, granite and sandy loam, which gives the wine its distinctive minerality.

Cultivation is carried out with great respect for nature. The winegrower largely avoids chemical agents and relies on sustainable management to preserve the vines’ natural balance. Harvesting is done exclusively by hand, usually at the beginning of October, when the grapes have reached their optimal degree of ripeness. This way, only the best selected grapes make it to the press.

In the cellar, the grapes are gently pressed. Fermentation takes place in temperature-controlled stainless steel tanks in order to preserve the fresh fruit aromas. Afterwards, the young wine rests for several months on the fine lees, which gives it structure and complexity. Ageing takes place without wood, so that the clarity and precision of the grape variety are preserved. The screw cap guarantees lasting freshness and reliably protects the wine from oxidation. After a few months of maturation, Kuenhof Riesling Alto Adige DOC is carefully bottled and allowed to rest before being released for sale.
