Production of Lilith Blauburgunder Rosé by Griesserhof

The grapes come from selected sites in Alto Adige, in the South Tyrol DOC. Here there is a unique interplay of alpine altitude and sunlight. Steep slopes, barren gravel and moraine soils as well as calcareous inclusions shape the terroir. These soils store the day’s warmth and release it slowly at night. At the same time, the altitude ensures cool nights and a long ripening period.

Pinot Noir, known in South Tyrol as Blauburgunder, is considered a diva in the vineyard. It demands a lot of attention but rewards with fine fruit and great elegance. At Griesserhof, the grapes ripen with moderate yields. In this way, the aroma concentrates in every berry. Harvesting is carried out carefully, with a focus on optimal ripeness and aromatic freshness. Only fully ripe grapes make it to the cellar.

For this rosé, the producer presses the Pinot Noir very gently. Either the juice runs off from the red wine must as saignée, or contact with the berry skins remains brief.
