Production of Maximum Rosé Brut by Ferrari
The grapes for this Trento DOC come from selected sites in Trentino. The vineyards are located on partly steep slopes, characterized by calcareous and partly dolomitic soils. These soils bring tension, minerality and clarity to the wine. The climate shows strong temperature differences between day and night. This leads to grapes with intense aromatics and taut structure.
The blend is based on classic varieties of the region, with a focus on Pinot Noir and Chardonnay. Pinot Noir contributes fruit, spice, structure and the delicate rosé tone. Chardonnay provides cool citrus freshness, finesse and the elegant backbone of the wine. Harvesting is carried out carefully and in several passes in order to bring only ripe and aromatic fruit into the cellar. The grapes reach the cellar in small crates so that they remain undamaged.
The processing for the rosé blend is carried out with particular care. A portion of the Pinot Noir grapes undergoes a short maceration period. This releases a delicate extraction of color from the skins, while tannins only subtly enter the must. This is followed by gentle pressing that extracts only the finest must. Temperature-controlled fermentation in stainless steel tanks takes place at cool temperatures. This preserves freshness, fine berry aromas and floral notes.
After the first fermentation, the base wine blend is created. Here the cellar master leaves his signature. He selects individual lots which together express the desired style.
