Here, the vines sink their roots deep into soils of sedimentary and weathered rock. After being harvested by hand, the grapes are brought to the press house as quickly as possible. There, they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged on the fine lees for several months before it is finally bottled.
