Vinification of the Weinbiet Manufaktur Merlot

The powerful Merlot from Germany is a single-varietal wine, made from the Merlot grape variety. In the Palatinate region, the vines that produce the grapes for this wine grow on soils dominated by clay. At the time of optimal ripeness, the grapes for Merlot are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the manual harvest, the grapes are taken to the press house as quickly as possible. Here they are sorted and carefully crushed. This is followed by fermentation in large wood at controlled temperatures. After the completion of fermentation, the powerful Merlot is aged for several months in oak barrels.
