Vinification of the Mizzole Valpolicella Superiore DOC by Cecilia Beretta

The grapes for the Mizzole Valpolicella Superiore DOC come from carefully tended vineyards in the renowned Valpolicella region. The vines are planted at altitudes of 200 to 400 meters above sea level, providing optimal conditions. Harvesting is done by hand to select only the best berries.

After harvesting, the grapes are gently pressed. Fermentation takes place in stainless steel tanks, where the grapes ferment at a controlled temperature. This preserves the freshness and typical aromas of the region. Subsequently, the wine is aged in large, used oak barrels, which adds further complexity and integration.

After about 12 to 18 months of aging, the Mizzole Valpolicella Superiore DOC is carefully filtered and bottled to preserve the best qualities of the wine. Every step in the vinification process is designed to maximize the quality and aromatic potential of the grapes.
