The barrel-aged Vin Santo from the wine-growing region of Tuscany presents itself in the glass in a dense light yellow, golden yellow. This wine also shows reflections at its core. Swirling the wine glass, this dessert wine reveals a high viscosity, which can be seen in the clear stained glass windows at the edge of the glass. The bouquet of this dessert wine from Tuscany impresses with nuances of apricot, peach, nectarine and mirabelle plum. If we trace the aromas further, oriental spices, vanilla and roasted almond are added.

The Vin Santo can rightly be described as exceptionally fruity and velvety, as it has been vinified with a wonderfully sweet taste profile. This silky and dense dessert wine is full-bodied and multi-faceted on the palate. The Vin Santo is wonderfully fresh and lively on the palate thanks to its distinctive fruit acidity. On the finish, this very storable wine from the Tuscany wine-growing region impresses with its considerable length. Once again, there are hints of mirabelle plum and peach. Mineral notes from the limestone and marl-dominated soils are added to the finish.

Vinification of the Vin Santo from Castello Pomino

This powerful Vin Santo from Italy is made from the Malvasia Bianca, San Colombano and Trebbiano grape varieties. The grapes grow under optimal conditions in Tuscany. Here, the vines dig their roots deep into limestone and marl soils. Of course, the Vin Santo is also determined by climatic and stylistic factors Pomino DOC. This Italian wine can be described as an old world wine in the best sense of the word, presenting itself in an extraordinarily impressive way. When they are perfectly ripe, the grapes for the Vin Santo are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After harvesting, the grapes are immediately taken to the winery. Here they are sorted and carefully broken up. This is followed by fermentation in large oak barrels at controlled temperatures. Once fermentation is complete, the Vin Santo is aged for 48 months in oak barrels.
