Vinification of Peter Mertes Rotwild Portugieser Weissherbst
The elegant Rotwild Portugieser Weissherbst from Germany is a varietal wine made from the Blauer Portugieser grape. After the grape harvest, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine matures for several months on the fine lees before it is finally bottled. After the wine is finished, Rotwild Portugieser Weissherbst is gently harmonized.
