Vinification of Talò Primitivo di Manduria IGP from Cantine San Marzano

The grapes for the Talò Primitivo di Manduria IGP grow in the sunny region of Apulia. The vines thrive on calcareous soils, which impart a special mineral quality to the wine. The harvest is done manually with careful selection to choose only the best grapes for vinification. After the harvest, the grapes are destemmed and gently pressed. Fermentation takes place in temperature-controlled stainless steel tanks to optimally preserve the fruity aromas. The grape must is fermented with selected yeast strains that support the characteristic style of the Talò Primitivo. After fermentation, the wine matures in barrique barrels made of American and French oak. This aging process adds additional dimensions and fine roasting notes to the wine. Following a maturation of at least 6 months, the wine is filtered and bottled. Thus, the Talò presents itself in its full splendor with a flavor expression that delights.
