Vinification of I Borboni Asprinio D'Aversa Cripto
This well-balanced sparkling wine from Italy is vinified from the Asprinio grape variety. The grapes grow under optimal conditions in Campania. Here, the vines sink their roots deep into soils of sand and volcanic rock. After harvest, the grapes are quickly brought to the winery, where they are sorted and gently pressed. This is followed by the fermentation of the base wines. After the cuvée is assembled, the wine undergoes further maturation using the Méthode Traditionelle. The I Borboni Asprinio D'Aversa Cripto then ages for several months in the bottle and is finally disgorged.
