The grapes grow under optimal conditions in Trentino-Alto Adige. The vines dig their roots deep into sandy soils here. When perfect physiological ripeness is assured, the grapes for the Brut Nature Candido Metodo Classico are harvested exclusively by hand, without the help of straining and minimally selective harvesters. After harvest, the grapes are quickly transported to the pressing house. Here, they are sorted and gently pressed. Next comes the fermentation of the base wines. After assembling the cuvée, further aging takes place based on the Methode Traditionelle. Subsequently, the Villa Persani Brut Nature Candido Metodo Classico matures in the bottle for several months and is finally disgorged.
