The Capitel San Rocco Valpolicella Ripasso Superiore DOC from the Tedeschi winery is ruby red in the glass, clear and translucent. On the nose, it has complex and generous aromas of cherry, raspberry and redcurrant, which give the wine freshness. Fruity, balanced and well-structured, this red wine from Veneto has a harmonious interplay of acidity and alcohol, round, full-bodied and warm on the palate. The fruity aromas from the bouquet are confirmed in the long and persistent finish.

Production of the Capitel San Rocco Valpolicella Ripasso Superiore from the Tedeschi winery

This typical red wine from northern Italy is produced using the traditional wine-making technique known as Ripasso. A portion of the Valpolicella, which was vinified the previous fall, is poured onto the Amarone marc after it has been decanted in March. The Corvina, Corvinone and Rondinella grapes (30% each) and 10% of other local red grapes for this wine come from the vineyards on the moraine hills of the Valpolicella area.
After manual harvesting, the grapes are simultaneously destemmed and pressed. Alcoholic fermentation takes place over 15 days at a controlled temperature, followed by malolactic fermentation and spontaneous clarification until the end of March. At this point, part of the wine undergoes slow fermentation at a controlled temperature for 8 to 10 days on the Amarone and Recioto marc. Only then is the wine aged for 1 to 2 years in Slavonian oak barrels and, after bottling, matures for a further 6 months in the bottle.
The Capitel San Rocco Valpolicella Ripasso Superiore is a wine with the potential to age for 12 to 15 years.
