Vinification of Scala Fenicia Capri Bianco
The basis for the balanced Capri Bianco from Campania is grapes from the varieties Biancolella, Falanghina, and Greco Bianco. When they are perfectly ripe, the grapes for the Capri Bianco are harvested exclusively by hand without the help of coarse and hardly selective grape harvesters. After harvest, the grapes are immediately brought to the press house. Here, they are sorted and gently opened. Subsequently, fermentation takes place in bottle fermentation at controlled temperatures. The fermentation is followed by several months of aging on the fine lees before the wine is finally bottled.
