Vinification of Garda Faial Merlot DOC by La Prendina

The Merlot vines for Garda Faial Merlot DOC - La Prendina grow in selected sites near Lake Garda in Lombardy. The mild climate with many hours of sunshine and cooling winds from the lake offers ideal conditions for the fully ripe grapes. The soils consist of gravel, sand and a bit of clay. They provide good drainage and limited yield, which concentrates the aromas in the berries. The vines are carefully tended, and the leaf canopy is managed in a targeted way to provide enough light but avoid heat stress.

Harvest is usually selective and by hand. This way only ripe berries reach the cellar. Strict selection already takes place in the vineyard, with damaged grapes discarded immediately. In the cellar, another selection follows on the sorting table. The aim is a perfect starting point for a dense, clear Merlot with great depth. The grapes are destemmed and gently crushed to only slightly open the berry skins. This allows color, tannins and aromas to be extracted in a controlled manner.

Fermentation takes place in temperature-controlled stainless steel tanks. During this process, the cap is regularly punched down or the must is poured over it. This allows color and tannins to pass gently into the must without bitter notes.
