Vinification of Le Volte Dell'Ornellaia Toscana from Tenuta Dell'Ornellaia

The starting point for the first-class and wonderfully powerful Le Volte Dell'Ornellaia Toscana cuvée from Tenuta Dell'Ornellaia is Cabernet Sauvignon, Merlot and Sangiovese grapes. The grapes grow under optimal conditions in Tuscany. Here, the vines dig their roots deep into soils of clay, sand, silicate rock, marl and volcanic rock. Of course, Le Volte Dell'Ornellaia Toscana is also determined by more than just the Toscana IGT soil. This Italian can literally be described as an Old World wine that is exceptionally elegant and complex. When they are perfectly ripe, the grapes for Le Volte Dell'Ornellaia Toscana are harvested exclusively by hand without the help of coarse and less selective machines. After the harvest, the grapes are transported to the winery as quickly as possible. Here they are sorted and carefully broken up. This is followed by fermentation in concrete and small wood at controlled temperatures. At the end of fermentation, Le Volte Dell'Ornellaia Toscana is matured in French oak barriques for a further 10 months.
