Vinification of the Leonia Pomino Brut Millesimato Metodo Classico from Castello Pomino

The elegant Leonia Pomino Brut Millesimato Metodo Classico from Italy is a cuvée made from the Chardonnay and Pinot Noir grape varieties. The grapes grow under optimal conditions in Tuscany. Here, the vines dig their roots deep into limestone and marl soils. When they are perfectly ripe, the grapes for the Leonia Pomino Brut Millesimato Metodo Classico are harvested exclusively by hand without the help of coarse and less selective machines. After harvesting, the grapes are quickly taken to the winery. Here they are selected and carefully broken up. This is followed by fermentation of the base wines. After the assemblage of the Metodo classico, further ageing follows on the basis of classic bottle fermentation. This is followed by ageing in the bottle for 28 months.
