Vinification of the Mabis Ripasso della Valpolicella Classico Superiore DOC from Biscardo
The basis for the first-class and wonderfully powerful Mabis Ripasso della Valpolicella cuvée from Biscardo are Corvina, Molinara and Rondinella grapes. The grapes for this red wine from Italy are harvested exclusively by hand at optimum ripeness. After the harvest, the grapes are quickly transported to the winery. Here they are sorted and carefully broken up. This is followed by fermentation in small wooden vats at controlled temperatures. Fermentation is followed by maturation for 12 months in oak barrels.
