Here, the vines sink their roots deep into clay soils. After the harvest, the grapes are quickly brought to the winery, where they are selected and gently crushed. Fermentation in stainless steel tanks at controlled temperatures follows. Vinification is followed by maturation on the fine lees for several months before the wine is finally bottled.
