Vinification of Pèppoli Chianti Classico from Tenuta Pèppoli

The basis for the balanced Pèppoli Chianti Classico from Tuscany is made up of grapes from the Merlot, Sangiovese, and Syrah varieties. Naturally, the Pèppoli Chianti Classico is also influenced by the climatic and stylistic factors typical of Chianti Classico DOCG. This Italian wine can truly be described as a wine of the Old World, presenting itself extraordinarily fragrant. An important factor affecting the ripening of the harvest is that the Merlot, Sangiovese, and Syrah grapes thrive under a warm climate. This results in particularly well-ripened grapes and a relatively high alcohol content in the wine. The grapes for this Italian red wine are harvested exclusively by hand once optimal ripeness has been achieved. After hand harvesting, the grapes are promptly transferred to the winery, where they are sorted and gently crushed. Fermentation then takes place in large wooden vats at controlled temperatures. This is followed by aging for 12 months in barrels made from Slavonian oak. After barrel maturation, the wine undergoes a lengthy bottle aging, which adds further complexity to this red wine.
