The basis for the balanced Steinbock Weissburgunder from Germany is grapes of the Pinot Blanc variety. In the Pfalz, the vines that produce the grapes for this wine grow on clay and loess soils. When perfect physiological ripeness is ensured, the grapes for the Steinbock Weissburgunder are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the harvest, the grapes are brought to the press house immediately. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
