Here, the vines drive their roots deep into soils of clay and volcanic rock. After the harvest, the grapes are brought to the winery without delay. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After it is complete, the Tyto Olevano Romano Superiore can continue to harmonize on the fine lees for 12 months.
