The Untertürkheim gypsum Riesling of the Aldinger winery comes from the monopoly location of gypsum in Untertürkheim, which is the sole property of the winery. Vinification of the Aldinger Untertürkheimer plaster Riesling
The layer Riesling from the Untertürkheimer gypsum is made up of 40% in the unit barrel, 60% in the stainless steel tank. The fermentation is spontaneous. This is followed by a yeast store until March of the following year. The grapes grow on the best gypsum-copper soil, which provides an expressive minerality.
