The basis for the powerful Valpo Valpolicella Ripasso from Veneto is grapes from the Corvina, Corvinone, and Rondinella varieties. After the harvest, the grapes are immediately brought to the winery. There they are sorted and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. After fermentation, the wine is aged for several months in oak barriques.
