The grapes for this Italian red wine are harvested exclusively by hand at the peak of ripeness. After the hand harvest, the grapes are quickly taken to the press house, where they are sorted and gently broken open. Fermentation then takes place in stainless steel tanks at controlled temperatures. This is followed by a few months of aging on fine lees before the wine is finally bottled.
