The grapes for this Italian red wine are harvested exclusively by hand after optimal ripeness has been ensured. After harvest, the grapes are promptly taken to the cellar. Here they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures.
