The vines here have their roots deep in clay soils. When they are perfectly ripe, the grapes for the Ciro' Rosato Bio are harvested exclusively by hand without the use of coarse and hardly selective harvesters. After the harvest, the grapes are quickly transferred to the press house. Here, they are sorted and gently crushed. Then, fermentation takes place in stainless steel tanks at controlled temperatures. After fermentation, the Ciro' Rosato Bio can continue to harmonize on the fine lees for 3 months.
