When perfectly ripe, the grapes for the Ciro' Rosso Classico Superiore Bio are harvested exclusively by hand without the aid of coarse or highly selective harvesters. After harvest, the grapes are swiftly transferred to the winery. Here, they are sorted and gently crushed. Fermentation takes place in concrete at controlled temperatures. Following fermentation, the wine undergoes several months of aging on fine lees before finally being bottled.
