Vinification of the Chianti Colli Senesi from Geografico
The foundation for the balanced Chianti Colli Senesi from Tuscany consists of grapes from the Canaiolo and Sangiovese varieties. The grapes for this red wine from Italy are harvested particularly quickly and at the coolest possible time of day once optimal ripeness has been ensured, in order to preserve their aromas. After the harvest, the grapes are brought to the press house without delay. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks and large wooden casks at controlled temperatures. After fermentation is complete, the Chianti Colli Senesi can continue to harmonize on the fine lees for 8 months.
