The soil in the vineyards consists mainly of limestone, clay and sandy components. This mix ensures good drainage and stores enough water for dry periods. The vines root deeply and can thus transfer the character of the terroir into the grapes. Yields are deliberately limited in order to achieve higher concentration in the berries.
The harvest takes place in several passes, depending on the ripeness level of the individual parcels. The berries are selectively picked so that only ripe, aromatic fruit reaches the cellar.
