Vinification of Ghiaia Nera Nerello Mascalese Sicilia DOC from Tenuta Tascante

The vinification of the Contrada Pianodario Etna Rosso is carried out with the utmost care, beginning with a traditional red fermentation at controlled temperatures of 25-30°C and an 8-day maceration with the skins. After the completion of malolactic fermentation, the wine matures for 12 months in Slovenian oak barrels, giving it its distinctive structure and finesse. The soil on which this exquisite wine grows is characterized by a stratigraphic sequence of volcanic origin, with layers up to 40,000 years old, providing a unique foundation that contributes to the wine’s complexity and depth.
