For Carlo Botter, the search for the perfect Doppio Passo white wine in Sicily has come to a happy end. The Doppio Passo Grillo Sicilia DOC from CVCB is an impressively fruity, fresh and balanced white wine cuvée vinified from Grillo and small parts of Cataratto and Chardonnay.
In the glass this wine shines in a clear straw yellow with glittering highlights. The nose is skilfully taken in by an intense fruity bouquet. Juicy yellow stone fruits reveal themselves - especially apricot and peach - perfectly complemented by sun-ripened citrus notes. On the palate this Italian white wine convinces with a wonderful freshness, intensive fruit fullness and mild acidity. The full-bodied body also contributes to the fresh balance of this white wine and accompanies it into the pleasant, elegant finish.
Vinification of the Doppio Passo Grillo
The grapes - Grillo, Catarratto and Chardonnay - are selected by hand for the exceptional Doppio Passo Grillo.
The easiest way to explain Doppio Passo is to use two work steps. In the first step, the grapes are harvested at the normal harvest time. For the second step, the grapes are left longer on the vines, which increases ripeness and concentration in the berries. In the first step, only Grillo is harvested for this white wine. In the second step, Catarrato and Chardonnay are added. Both grape harvests are brought together and fermented together in stainless steel tanks.
