The elegant Dottinger Castellberg Syrah from Martin Waßmer presents in the glass with a bright purple-red color. When swirled, this red wine from Martin Waßmer offers aromas of blueberries, black cherries, plums, blackcurrants and mulberries, complemented by garrigue, beech smoke and fireplace wood. The Martin Waßmer Dottinger Castellberg Syrah delights with its elegantly dry flavor profile. It was bottled with only 2.2 grams of residual sugar. This is a genuine quality wine that clearly stands apart from simpler qualities, and thus this German wine, for all its dryness, enchants with the finest balance. Flavor does not necessarily require a lot of residual sugar. Thanks to its lively fruit acidity, the Dottinger Castellberg Syrah is wonderfully fresh and vibrant on the palate.
Vinification of the Dottinger Castellberg Syrah from Martin Waßmer
The well-balanced Dottinger Castellberg Syrah from Germany is a varietal wine made from the Syrah grape. The Dottinger Castellberg Syrah is an Old World wine in the best sense of the word, as this German wine exudes an exceptional European charm that clearly underlines the success of wines from the Old World. The ripening of the grapes for this Syrah wine is influenced to a not insignificant extent by the climate of the growing region. In Baden, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and evenly formed grapes and a rather moderate must weight. At optimal ripeness, the grapes for the Dottinger Castellberg Syrah are harvested exclusively by hand, without the use of coarse, less selective mechanical harvesters. After hand-picking, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation at controlled temperatures. Fermentation is followed by maturation.
Food recommendation for the Martin Waßmer Dottinger Castellberg Syrah
This German wine is best enjoyed at a temperature of 15 - 18°C. It pairs perfectly as an accompanying wine with stuffed bell peppers, fried calf’s liver with apples, onions and balsamic sauce, or boeuf bourguignon.
