Here, the vines root deeply in sandy soils. When optimal physiological ripeness is achieved, the grapes for the Erbaluce di Caluso Metodo Classico Brut are harvested exclusively by hand, without the use of demanding and less selective mechanical harvesters. After hand-harvesting, the grapes are promptly taken to the press house, where they are sorted and gently pressed. Next comes the fermentation of the base wines. After the assemblage of the cuvée, further aging takes place according to the Methode Traditionnelle. Subsequently, the Ilaria Salvetti Erbaluce di Caluso Metodo Classico Brut matures in the bottle for several months and is finally disgorged.
