Vinification of the I Salci Gran Selezione Chianti Classico from Borgo Salcetino
This balanced red wine from Italy is vinified from the Canaiolo and Sangiovese grape varieties. In Tuscany, the vines that produce the grapes for this wine grow on clay and sandy soils. When perfect physiological ripeness is ensured, the grapes for the I Salci Gran Selezione Chianti Classico are harvested exclusively by hand, without the use of rough, non-selective mechanical harvesters. After the harvest, the grapes are brought to the winery immediately. There they are selected and gently crushed. This is followed by fermentation in large wooden casks at controlled temperatures. After fermentation is complete, the elegant I Salci Gran Selezione Chianti Classico is aged for another 24 months in oak barrels. The barrel aging is followed by a long period of bottle maturation, which makes this red wine even more complex.
