Vinification of Borgo Salcetino Chianti Classico DOCG
The Sangiovese (95%) and Canaiolo (5%) grape varieties are grown on clay and sandy soil in the vineyards of the municipality of Radda in Chianti. The harvest is carried out by hand. The mashing on the shells is carried out for 18 days at a controlled temperature of 23° C. This is followed by malolactic fermentation, which takes place 70% in wooden barrels and 30% in steel tanks. Then the Borgo Salcetino Chianti Classico stays in the wooden barrel for another 12 months. Only then will the bottling take place and another time in the bottle before this wonderful Chianti wine from Tuscany comes on the market.
