The grapes grow under optimal conditions in Emilia-Romagna. The vines have deep roots in clay soils. The grapes for this Italian white wine are harvested exclusively by hand once optimal ripeness is ensured. After harvest, the grapes are immediately taken to the press house. Here, they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. The fermentation is followed by several months of aging on the fine lees before the wine is finally racked off.
