Vinification of the Praesepium Vendemmia Tardiva Bio from Stachlburg Baron von Kripp
This elegant Italian sweet wine is organically made from the grape varieties Riesling and Sauvignon Blanc cuvette. When perfectly ripe, the grapes for the Praesepium Vendemmia Tardiva Bio are harvested exclusively by hand, without the use of coarse and hardly selective machines. After harvest, the grapes are quickly transported to the winery. Here, they are sorted and gently broken open. This is followed by fermentation in small wooden barrels at controlled temperatures. After fermentation, the wine undergoes maturation for several months in oak barrels.
