The Timè Grillo from the Vaccaro winery shimmers light yellow in the glass. The southern Italian white wine exudes an aroma of fresh limes and floral notes, with clear hints of exotic fruits. Dense on the palate, with clear fruit and subtle barrique notes. Nevertheless, very delicate and flattering. There is a lovely vanilla note on the finish.
"Timè" means respect - which is exactly what this wine was given. The special care begins in the vineyard. Yields were strictly limited and the grapes were only harvested by hand when fully ripe. This was followed by a short maceration and chilled fermentation, followed by a maturation phase in barriques. The result is a Grillo that is typical of the region and variety, which goes perfectly with Mediterranean cuisine and is recommended as an accompaniment to Sicilian dishes.
