Vinification of La Source Torrette
The basis for the balanced Torrette from Aosta Valley are grapes from the Petit Rouge and Vien de Nus varieties. The grapes grow under optimal conditions in the Aosta Valley. The vines have deep roots in sandy soils here. The berries for this Italian red wine are harvested by hand only after optimal ripeness has been ensured. After the harvest, the grapes are quickly transported to the winery. Here, they are sorted and gently crushed. Subsequently, fermentation takes place in stainless steel tanks at controlled temperatures. The vinification is followed by a few months of aging on the fine lees before the wine is finally bottled.
