Tasting notes / degustation of Ripasso Valpolicella from Sartori di Verona

The red color of the Ripasso Valpolicella DOC from Sartori di Verona is reminiscent of a ruby with a slight purple shimmer. Its intense bouquet recalls strong, spicy notes of licorice and aromas of fruity mulberry and elderberry, joined by blackberry and ripe apple. An open, characterful sensation shapes the palate, whose overall structure is beautifully framed by youthful tannins. A long, powerful finish rounds off this red wine.

Vinification / production of Ripasso Valpolicella from Sartori di Verona

A true Ripasso, obtained through the special vinification method of a second extraction of Amarone pomace by the already fermented Valpolicella Superiore in winter. It comes from the tightly defined Valpolicella valley of Val di Mezzane and is grown in high-altitude vineyard sites that yield delicious grapes, on clay- and limestone-rich soils with a high mineral content. The fully ripe and exclusively high-quality grapes are harvested by hand, then dried for one month and finally crushed. This is followed by a slow fermentation over 30 days, then maturation in oak barrels.
