For their 12 e Mezzo series, the three of them set themselves a strict target in the name itself, as the wines should not have more than 12.5% vol. By harvesting some of the grapes very early, they guarantee a moderate alcohol content and also ensure a freshness that many reds from southern Italy lack.

After harvesting and selecting the organically produced grapes, fermentation takes place in stainless steel tanks. The 12 e Mezzo Primitivo Puglia Organic Wine then matures for a few months in French oak barrels, giving it even more complexity.
