Vinification of Cenatiempo Biancolella Ischia

The basis for the balanced Biancolella Ischia from Italy is grapes of the Biancolella variety. After hand-picking, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally bottled.
